Wood Board vs Disposable Pans (2026)

Updated 2026-08-20 Researched, not tested in person
Quick answer

A large board with a juice groove is what you slice on, and it is worth the money if you cook often. Disposable pans catch juice during resting and holding, and go in the bin afterwards. Use the pan for holding and the board for slicing, and keep raw and cooked meat on different surfaces throughout.

Choose the John Boos Maple Cutting Board if…

You cook and slice regularly. A large end-grain or edge-grain board is kinder to knives than any plastic and lasts decades if you oil it and never put it in a dishwasher.

Choose the Heavy Duty Aluminium Pans if…

You need somewhere for meat to rest and be carried without losing juice, and somewhere raw meat can sit that you throw away afterwards. That last point matters: use separate surfaces for raw and cooked, and wash hands between.

Frequently asked questions

Is wood less hygienic than plastic?

Research generally finds wood performs at least as well and sometimes better, because bacteria drawn into the grain do not survive well. The important part is washing and drying properly either way, and never soaking a wooden board.

How do I care for a wooden board?

Hand wash, dry standing on edge, and oil periodically with food-safe mineral oil. Never put it in a dishwasher and never leave it wet, which is what splits boards.

What about the juice from resting?

Pour it back over sliced meat or into the sauce. It is concentrated flavour and throwing it away is the most common waste in home barbecue.

How we choose gear: we compare published manufacturer specifications, capacity and temperature ranges, materials, warranty terms and verified owner reviews. We do not test gear in person and we do not publish hands-on claims we cannot support.

Cook times and temperatures are researched guidance, not a food-safety authority. Every figure on this page is an estimate: smokers, ambient weather, humidity and the individual cut all move it. Food is safe when a calibrated instant-read thermometer says so, never when a clock or a chart does. Keep food out of the 40°F to 140°F danger zone, observe the 4 hour rule, and follow current USDA safe minimum internal temperatures. If you are cooking for anyone pregnant, very young, elderly or immunocompromised, cook to the USDA minimums rather than to a preference-based doneness temperature.
