SmokerCalc.com exists to answer one question well: when will it be done? Everything else on the site grew out of that. Where the numbers come from
Two different kinds of number appear on this site and they are held to two different standards.
Safe minimum internal temperatures are published USDA FSIS figures. They are a food-safety floor, they are not our opinion, and we do not adjust them for texture, for tradition or for anybody's preference. 165°F for all poultry, 160°F for ground meats, 145°F with a three minute rest for whole cuts of beef, pork, lamb and veal, 145°F for fish, 165°F for leftovers and casseroles. Where a cut is commonly cooked below one of those, we say plainly that it is a personal risk decision and that it is not appropriate for anyone pregnant, very young, elderly or immunocompromised.
Cook times and texture targets are planning estimates. Hours per pound is a heuristic, not a physical law, and a real cook moves by 25 percent or more with ambient temperature, wind, humidity, how often the lid opens, the individual animal and whether the cut is wrapped. We publish them as windows rather than as single numbers for that reason, and every page says the same thing: plan with the chart, finish with a calibrated thermometer.
Every figure lives in one shared data file that the calculators, the charts and the cut pages all read from. That is a deliberate structural choice. The fastest way to lose a reader on a cooking site is for the calculator to say twelve hours and the chart on the next page to say nine, and the only reliable fix is to make it impossible rather than to check by hand.
Why we do not test gear in person
Because we would rather tell you what we actually know. We compare published manufacturer specifications, capacity and temperature ranges, materials and construction, warranty terms and verified owner reviews. We do not run cookers side by side in a yard, and we never write "we tested" or "hands-on" about equipment we have not used.
That is a real limitation and it is worth stating rather than papering over. What it buys you is that nothing here is invented. Any site claiming hands-on testing of forty smokers is telling you a story, and the honest version of gear guidance is that specifications, certifications and the accumulated experience of thousands of owners tell you most of what a purchase decision needs.
It also means the recommendations point down as often as up. Several roundups here recommend the cheaper option, and every expert-tier pick carries an explicit statement of who should not buy it. The expert build opens by telling most readers to buy the cheaper one instead. Credibility comes from talking people out of purchases as readily as into them.
How the site is funded

What this site is not
It is not professional culinary instruction, and it is not a food-safety authority. It is researched guidance written carefully, and the authority on safe cooking temperatures is USDA FSIS rather than us. If a figure here ever disagrees with current USDA guidance, follow USDA guidance and treat the difference as our error. The disclaimer sets that out in full.
