Smoking Time and Temperature Chart for Every Cut

Smoke collagen-heavy cuts at about 1.5 hours per pound at 225F, 1.25 hours per pound at 250F and 1 hour per pound at 275F: a 14 lb packer brisket at 250F is roughly 17 h 30 m before the rest, and it is pulled at 203F for texture. USDA safe minimums are separate and lower: 165F for all poultry, 160F for ground meat, and 145F with a 3 minute rest for whole cuts of beef, pork, lamb and veal.

A smoking time chart answers one question: when do I light the fire. The short version is that heavy, collagen-rich cuts run at roughly 1.5 hours per pound at 225°F, 1.25 hours per pound at 250°F and 1 hour per pound at 275°F, while ribs, whole birds and fish are timed per rack or per piece because they do not scale with weight at all. A 14 lb packer brisket at 250°F works out at about 17 h 30 m, an 8 lb pork butt at the same temperature about 12 h, and a 15 lb turkey at 275°F about 6 h 45 m.

Real cooks vary by 25 percent or more, and the only instrument that knows whether your particular piece of meat is done is a probe inside it.

Note the two temperature columns that sit side by side near the end of that table. Pull at is a texture number. USDA min is a safety number. On a brisket they are 58 degrees apart, and the gap represents hours of cooking that exist purely to render collagen. On a whole turkey they are identical, which is why poultry has no equivalent margin for error.

How long does it actually take to smoke a real piece of meat?

Hours per pound is a planning device, not physics. Heat travels into meat from the surface inward, so what really sets the clock is thickness, and weight is only a rough proxy for it. A thick, square 12 lb brisket will beat a long, flat 14 lb one to temperature every time. That is the single biggest reason two cooks following the same chart with the same cooker report times two hours apart.

The table below runs the arithmetic for a typical weight of each per-pound cut so you can see the spread at a glance instead of reaching for a calculator. Rest time is listed separately and then folded into a total, because rest is not padding you can skip: a large cut pulled at 203°F keeps climbing for several degrees and needs 45 minutes or more before slicing, or the moisture ends up on the cutting board rather than in the meat.

What does raising the grate temperature by 25 degrees actually buy you?

Averaged across every per-pound cut in the chart, moving from 225°F to 250°F removes about 15 percent of the cook, and moving from 250°F to 275°F removes about 17 percent more. On a 14 lb brisket that is the difference between 21 h and 17 h 30 m, which is the difference between starting the night before and starting before breakfast.

The argument for 225°F is smoke exposure and a gentler collagen conversion. The argument against it is every other thing: more fuel, more hours awake, more time in the danger zone on a large cut, and a much longer stall. Poultry is the exception that is not really an exception. Chicken and turkey skin needs heat to render its fat and dry out, and 225°F does not supply it. The result is safe, cooked, and unpleasantly rubbery. Run birds at 275°F or higher, or finish them hot for the last twenty minutes.

Which cuts are timed per pound and which are timed per rack?

24 of the 47 cuts in this chart scale with weight. The other 23 do not, and treating them as though they do is one of the most common planning mistakes in barbecue. A rack of spare ribs takes about 5 hours at 250°F whether it weighs 2.5 lb or 4 lb, and three racks in a rib rack take the same time as one. The controlling dimension is the thickness of the meat between the bones, and that barely changes.

The same logic covers whole birds up to a point, tenderloins, fish and anything cubed. A pork tenderloin is timed as a tenderloin. A salmon fillet is timed as a fillet. Once you internalise that, cooking for a crowd stops looking frightening: you are limited by grate area rather than by hours, which is what the smoker size calculator is for.

What is the stall and how many hours does it add?

The stall is a plateau, usually somewhere between 150°F and 165°F internal, where a large cut simply stops climbing for two to six hours. It is not a fault in your cooker. Moisture wicks to the surface and evaporates, and evaporation removes heat at very nearly the rate the fire is adding it, so the meat becomes a swamp cooler and holds its own temperature until the surface dries out enough to break the equilibrium.

13 of the cuts in this chart are flagged as stall-prone, and they are exactly the ones you would guess: brisket, pork shoulder, chuck, plate ribs, cheeks, oxtail and lamb shoulder. Small, lean and thin cuts do not stall in any meaningful way, so if a pork tenderloin appears to have stalled, check your thermometer rather than your fire.

You have three legitimate responses. Wait it out for the firmest bark and the least predictable schedule. Wrap in butcher paper, which breathes and cuts most of the stall while keeping the bark reasonably firm. Or wrap in foil, which kills the stall hardest and partly steams the bark soft. How do you work backwards from a serving time?

Take the slow end of the estimate, add the rest, add a buffer of at least two hours on anything longer than six hours, and count backwards from when you want to eat. For a 14 lb brisket at 250°F that is 17 h 30 m of cook, an hour of rest, and two hours of buffer, so roughly twenty and a half hours before service. Serving at 6pm means lighting the fire at about half past nine the previous evening.

Plan deliberately against the slow end. A cut that finishes early is a solved problem: wrap it, put it in a dry cooler packed with towels, and it will hold above 140°F for hours without any loss of quality. A cut that finishes late is not solvable at all. Experienced cooks consistently aim to finish two hours early and rest longer, and that is not caution, it is the only asymmetry in the whole schedule.

What moves your real cook time the most?

  • Thickness rather than weight. Heat travels inward from the surface, so the distance to the centre sets the clock. Two cuts of the same weight and different shapes finish hours apart.
  • Ambient temperature and wind. An uninsulated cooker on a windy 25°F day can add 30 to 50 percent. Wind strips heat off the steel faster than cold air alone does, which is why a windbreak is worth more than a blanket.
  • Opening the door. Every look costs roughly 15 minutes of recovery on a charcoal or electric cooker. Use a leave-in probe and stop peeking.
  • The water pan. A full pan stabilises the chamber and lengthens the stall by keeping the air humid. That is a trade, not a mistake, and the reasoning is in water pan vs no water pan.
  • Whether and when you wrap. Most cooks wrap between 160°F and 170°F, or when the bark colour is where they want it. Wrapping early costs bark, wrapping late costs hours.
  • Probe placement. Thickest part of the muscle, not touching bone and not in a fat seam. Fat conducts heat differently and reads high, which has you pulling an undercooked brisket with total confidence.
  • The animal itself. Two graded briskets from the same case can differ by two hours. This is the residual variance no chart can remove, and it is why the thermometer is the authority and the chart is the plan.

For most cooks 250F is the better default. Reserve 225F for cooks where you want the longest possible smoke exposure and have the hours spare. Use 275F or higher for poultry so the skin renders rather than turning rubbery.

Why is my brisket taking longer than the chart says?

Almost always the stall. Evaporative cooling from the meat surface can hold a large cut within a few degrees of 160F for two to six hours, and nothing about your fire is wrong when it happens. Cold air, wind, a full water pan, opening the door and an unusually thick cut all extend a cook as well. Wrapping in foil or butcher paper stops the evaporation and typically saves two to three hours on a brisket or pork butt.

Do two briskets on one smoker take twice as long?

No. Time scales with the thickness of an individual piece, not with the total weight on the grate. Two 12 pound briskets take roughly the same time as one 12 pound brisket, though a heavily loaded chamber recovers more slowly after you open the door and can run slightly cooler overall. Add about an hour of buffer for a full cooker and leave finger-width gaps between pieces so hot air can circulate.

Can I speed up a smoke by turning the temperature up mid-cook?

Yes, and it is a normal recovery move. Wrapping the meat and raising the grate temperature to 275F or 300F after the bark has set will pull hours back without much cost to the finished product, because the bark is already formed by then. What you cannot do is rush the beginning: raising the temperature before the bark sets gives you a thin, soft crust and less smoke flavour, since smoke adheres best to a cool, damp surface early in the cook.

How much buffer time should I build into a cook?

At least two hours on any cook longer than six hours, and treat the rest as separate again. Plan against the slow end of the range and rest longer.
