Two specs decide how a bag behaves on a long cook, and neither is printed in large type. Moisture content sets how much of the energy goes into boiling off water instead of heating your food, and ash content sets how often you are shop-vacuuming a burn pot mid-cook. Species is a flavour decision. Those two are a performance decision.

How many pellets does each temperature actually burn?

A pellet grill holds temperature by cycling an auger, so the burn rate is set by how hard the controller has to work. On a smoke setting the auger barely turns. At 450°F it runs almost continuously. The result is roughly a fivefold spread from bottom to top.

Why does weather change the number so much?

Almost every pellet grill under about $800 is single-wall steel. There is no insulation between the 225°F inside and the air outside, so the barrel radiates heat continuously and the controller replaces it by burning more fuel. Wind makes it worse than cold alone does, because moving air strips the boundary layer off the outside of the barrel and accelerates the loss.

Three things reduce the penalty without spending money on a new cooker. Site the grill out of the prevailing wind, even a fence panel helps. Keep the lid shut, because every look costs a recovery cycle. And preheat with the lid closed rather than open. How do you keep pellets from turning to sawdust?

Pellets are sawdust compressed under enough pressure that the wood's own lignin melts and binds them. Add water and that bond releases, the pellet swells and crumbles, and you have loose sawdust in the auger. A jammed auger is the most common pellet grill service call and it is entirely preventable.

  • Empty the hopper if the grill will sit unused for more than a couple of weeks, especially outdoors.
  • Store bags sealed in a bucket or a tote with a gasket lid, not in the open bag.
  • Keep them off concrete. A slab wicks moisture upward continuously, even when it looks dry.
  • Check before a long cook. Squeeze a pellet: it should be hard and glossy. If it crumbles or looks dull and fuzzy, it is not going to feed reliably.
  • Do not mix old and new in the hopper before an overnight cook. Start clean.

Because a thin-walled steel grill loses heat to the air continuously, and the controller replaces that heat by burning more fuel. The colder and windier it is, the larger the loss. Wind matters more than air temperature, since moving air strips heat from the outside of the barrel far faster than still cold air does. Expect 35 percent more fuel near freezing and up to 70 percent more in freezing wind.

Can you leave pellets in the hopper between cooks?

Not for long. Pellets are compressed sawdust held together by the wood lignin, and they disintegrate into loose dust as soon as they absorb moisture. Sawdust in the auger jams it and can cause a failed ignition. Empty the hopper if the grill will sit for more than a week or two, and store pellets in a sealed container off a concrete floor, which wicks moisture upward.

Do more expensive pellets burn longer?

Not meaningfully longer, but they do burn cleaner. The variables that matter are moisture content and ash content. Low-moisture pellets deliver more heat per pound because none of the energy is spent boiling off water, and low-ash pellets mean fewer burn-pot cleanouts during a long cook. Both effects are real and both are modest, so buy on ash and moisture rather than on price.

Does the flavour of the pellet change the cook time?

No. Wood species changes flavour and colour, not heat output in any way you would notice on the grate. Hardwood pellets all sit in a similar energy range per pound, and the controller simply feeds whatever it needs to hold the set temperature. Choose species for the flavour match to your meat, and choose brand for moisture and ash content.
