How to Season a New Smoker Before the First Cook
A new smoker arrives with things on it you do not want in your food. Steel is cut, pressed and welded with lubricants, it is shipped with anti-corrosion coatings, the paint and the high temperature coatings are still curing, and there is metal dust and adhesive residue in seams nobody wiped. Burning that off in an empty cooker takes an afternoon and it happens exactly once.
The second reason is the one that keeps paying. Heating a thin film of oil past its smoke point turns it into polymerised material: a hard, dark, plastic-like layer chemically bonded to the metal rather than sitting on it. That layer is what stops a firebox rusting through, stops bare steel tasting metallic, and gives smoke and rendered fat something to build on. It is the same chemistry as a cast iron pan, which is why a well used cooker interior looks like a well used skillet.
What does the manufacturer manual say?
Read it first, and follow it where it differs from anything here. The manufacturer instructions govern, and this is not a formality. Pellet grills have a specific priming and burn-in sequence that has to run before the auger will feed correctly. Some porcelain enamel cookers should not be oiled at all. Some cabinet smokers specify a particular first-run temperature to cure the coatings. Warranty terms occasionally reference it.
Where the manual is silent, the process below is the standard one, and it works on effectively every steel cooker made.
How do you season a smoker step by step?
- Assemble it completely and check it. Confirm the door and lid close on their seals, the dampers move freely, the probe grommet is fitted, and on gas cookers, that every fitting passes a soapy water leak check. Seasoning is also the first shakedown run.
- Wash the removable parts. Grates, racks, water pan and drip tray get hot soapy water and a rinse, then dry completely. This is the only stage where soap belongs anywhere near the cooker.
- Wipe the interior with a thin coat of oil. Interior walls, lid, grates, racks and the inside of the firebox on an offset. Thin is the operative word: a paper towel with oil on it, wiped over the surface, then a second dry towel to take back anything that pools. Thick oil does not polymerise, it turns gummy and stays sticky forever. Do not oil heating elements, electronic sensors or thermometer faces.
- Bring it to 275°F to 300°F and hold it for two to three hours. Empty, no food, no water in the pan. On charcoal and offset cookers this doubles as your first fire management practice, which is worth the afternoon on its own.
- Add wood for the last 45 minutes. Two chunks, or a couple of splits on an offset. Smoke deposits its own compounds into the fresh oil layer and darkens it, and it also tells you what your cooker's smoke actually looks like before anything expensive is riding on it.
- Shut it down and let it cool completely. The layer hardens as it cools, so leave it alone. Do not wipe it, do not wash it, and do not put a cover on until it is genuinely cold, since a cover over residual heat traps moisture against fresh metal.
Expect smoke and a chemical smell during the first hour, which is exactly what you are there to get rid of. Do it outdoors, well away from the house, with heat resistant gloves on for any adjustment. If the paint blisters or the smell is still strong at the end of three hours, that is a manufacturing coating problem to raise with the seller rather than something to cook through.
Which oil should you use?
Any refined, neutral oil with a smoke point above your seasoning temperature. That last clause is the whole selection criterion. An oil below the seasoning temperature does not polymerise cleanly, it burns, and burnt oil is a sticky, bitter residue rather than a protective layer.

For a 300°F seasoning run, anything from refined canola upward on that table works. The practical answer for most people is a bottle of plain vegetable oil, because you are wiping a thin film across a large surface and there is no flavour benefit to spending more. Aerosol cooking spray is acceptable and convenient, though the propellants and lecithin in some sprays leave a tackier residue than plain oil applied with a towel.
The two entries at the bottom of the table are the common mistakes. Extra virgin olive oil is a finishing oil with a smoke point around 350°F and a lot of free fatty acids, and it goes bitter and sticky in a cooker. Butter is worse, because milk solids scorch at around 302°F. Neither belongs in a seasoning run.
How does seasoning differ by cooker type?
The principle is constant and the practice varies quite a lot, mostly because of what the heat source is and what surfaces are exposed to it.

Pellet grills
A pellet grill's first run is a burn-in rather than a seasoning in the classic sense. The auger has to fill, the igniter has to light the first load, and the burn pot and barrel have to shed their manufacturing residue. Manufacturers typically specify 30 to 60 minutes at a high setting with the lid closed, and the sequence in the manual for your model is the one to follow. Wiping oil around the barrel of a pellet grill is not standard practice, though seasoning the cooking grates themselves is worthwhile. Electric cabinets
Oil the interior and the racks, not the element. Run at 275°F for two to three hours with the water pan empty, and add chips in the last 45 minutes. Charcoal bullets and drums
These need less oil than people expect, because most of the interior is porcelain enamel on the popular models. Concentrate on bare steel: the grates, the charcoal grate, the water pan and the inside of the lid. A bullet smoker seasoned properly and kept dry lasts decades. Offsets
The cooker that most needs this and rusts fastest without it. Season the firebox as thoroughly as the cook chamber, because the firebox is where thin steel meets live fire and condensation. How do you know it worked, and how do you keep it?
A seasoned interior is dark, hard and slightly glossy, and it does not come off on a fingertip. If your first look after cooling shows sticky or tacky patches, you used too much oil or the temperature was too low. Wipe the excess off with a dry towel and run the cooker hot for another hour, which usually finishes the job.
After that, ordinary cooking maintains it. Every fatty cut you smoke adds to the layer, which is why an old cooker interior is black and a new one is grey. The way people destroy it is by cleaning too aggressively: oven cleaner, soap and wire wheels all take a chamber back to bare steel, which is exactly the state seasoning exists to prevent. Re-season only when you have gone back to metal, after rust removal or an aggressive strip-down. Wipe a thin coat of oil on the bare areas and run the cooker at 275°F for an hour. Between seasons, keep the cooker dry and covered once it is fully cold, empty the ash before storage because ash holds moisture against steel, and keep disposable pans in the drip tray so grease never bakes onto the surfaces you are trying to protect.
