How long does it take to smoke a brisket?
A whole packer runs about 1.5 hours per pound at 225°F, 1.25 hours per pound at 250°F and 1 hours per pound at 275°F. Weight is the input everyone uses, but thickness is what actually sets the time. Buy on thickness and flexibility, not on the number on the label, and always build in a buffer. What should you look for when buying a brisket?
Buy a whole packer if you can, meaning the flat and the point still joined. How do you trim a packer brisket?
Trimming is the part beginners skip and then blame on the fire. A packer arrives with a hard wedge of fat between the point and the flat, a thick fat cap on one side, and a papery silverskin on the meat side. None of that renders in the time you have. It insulates the meat underneath, blocks smoke and rub, and gives you slices with an inch of grease along one edge.

- Flip it fat side down and remove the silverskin and any hard, waxy deckle fat from the meat side. This side takes the rub.

- Round off the thin corner of the flat and any flap of meat thinner than about half an inch. Those burn to charcoal long before the middle is done.

Save the trimmings. What rub does a brisket need?

Apply the rub at least an hour ahead, or the night before in the refrigerator, so the salt has time to draw moisture to the surface and then reabsorb it carrying the seasoning inward. Should you run 225°F or 250°F?
For most people 250°F is the better default. It removes roughly 15 to 20 percent of the total time, moves the meat through the danger zone faster, and the difference in finished tenderness is far smaller than the internet suggests. Reserve 225°F for when you specifically want maximum smoke absorption and have the hours to spend, and consider 275°F when you are short on time and willing to wrap earlier. Whatever you choose, hold it. A cooker sawing between 210°F and 290°F averages 250°F and cooks nothing like a steady 250°F, because the meat responds to the peaks and the bark sets unevenly. For wood, post oak is the Central Texas standard and the safest choice on a cook this long. Hickory works and reads heavier. Mesquite does not: it turns sharp and faintly bitter over eighteen hours, which is why it belongs on hot fast grilling rather than here. When should you wrap a brisket?
Wrap on bark colour, confirmed by temperature. The usual window is somewhere between 160°F and 175°F internal, which is also when the stall arrives, but the real test is whether the surface has set into a dark mahogany crust that does not smear when you touch it. Wrap before that and the bark never forms, because you have sealed moisture against a surface that still needed to dry. Spritzing before the wrap is optional and mildly helpful: a fine mist of water, stock or cider vinegar every hour keeps the surface from drying past the point where smoke sticks to it. What internal temperature is a brisket done at?
Start probing at 195°F. Most packers give up between 195°F and 205°F, with 203°F the number most cooks quote. Probe the thickest part of the flat, then the point, and treat them as separate cooks: the point carries more fat and usually reads tender sooner, which is why competition cooks often separate the two at the wrap and let the point run on to 205°F for burnt ends.

How long should a brisket rest?
At least 60 minutes, and two to four hours is better. Carryover on a wrapped brisket runs 5°F to 10°F, and the muscle fibres need time to relax and reabsorb the juice they squeezed out under heat. How do you slice a brisket?
Separate the point from the flat first. There is a fat seam between them and a long knife follows it easily. The two muscles run their grain in different directions, which is why slicing the whole thing in one pass guarantees half of it is wrong. Slice the flat across the grain at roughly pencil thickness, and cube the point for burnt ends or slice it thicker.
Cut only what you are serving. Sliced brisket dries out within minutes, while an unsliced half stays good in the wrap for another hour. A slice should hold together when you lift it by one end and pull apart with gentle pressure. Smoking a brisket in cold weather
Cold does two things at once: it slows the cook and it raises your fuel burn, and wind matters more than air temperature. An uninsulated cooker on a windy 25°F day can add 30 to 50 percent to both. Plan the schedule against the slow end of the window rather than the estimate, and load substantially more fuel than the calculator suggests, because running out at three in the morning is the one failure with no recovery.
Practical measures, in order of effect. Block the wind with a fence panel or a wall, keeping any barrier well clear of the cooker itself. Stop opening the door, since recovery time in the cold is several times what it is in summer. Preheat longer so the steel itself is hot, not just the air. Cooking brisket for a crowd
Work backwards from finished weight, not raw. At roughly 50 percent yield and half a pound of sliced beef per adult, a 14 pound packer feeds about 14 people as a main course, or considerably more as sandwiches.
