How to Smoke a Turkey Safely: Temperature, Time and Brine
A turkey is the one cook on this site where low and slow is the wrong answer. It is a large, lean bird with a hollow cavity, and holding it at 225°F asks it to spend a very long time at temperatures where bacteria multiply, in exchange for skin you cannot bite through. Run it hot, at 275°F to 325°F, and both problems disappear at once.
Turkey is also the cook where a single probe is not enough. Breast and thigh finish at different rates, and a bird that reads 165°F in the breast can still be under temperature deep in the thigh joint. You need to check both, in the thickest meat, without touching bone.
What temperature should you smoke a turkey at?
Do not smoke a turkey below 225F. A large bird at low temperature spends too long in the danger zone. 275F to 325F is the safer and better cook. That is not a preference, it is the reason this guide exists. A 16 pound bird at 225°F can take nine hours or more, and a large share of that is spent with the interior inside the 40°F to 140°F band. At 300°F the same bird is through that band quickly, the fat under the skin renders instead of sitting there, and the smoke flavour is still plentiful because poultry takes smoke readily.
The table below uses the same figures as the cook time calculator. It stops at 275°F because that is the top of the site's standard grate temperatures. If you run 300°F to 325°F, expect roughly 11 to 13 minutes per pound and start probing early.

Should you brine a turkey?
Brining changes turkey more than it changes any other cut on this site, because the breast has almost no intramuscular fat protecting it from the last few degrees of the cook. A 5 percent wet brine is the standard strength, and stating it as a percentage rather than as cups of salt is the only honest way to do it, since a cup of table salt carries roughly twice the salt of a cup of flaked kosher.

The whole soak must stay below 40°F. A cooler with ice works when the refrigerator will not take a bucket, but check the ice rather than assuming it. Work out the salt weight for your container with the brine ratio calculator, and see the brine time chart for everything else.
A dry brine is the alternative and it gives noticeably better skin. Salt the bird at about 1 percent of its weight, inside and out, and leave it uncovered on a rack in the refrigerator for 24 to 48 hours. The surface dries out, which is exactly what crisp skin needs. A wet-brined bird should also be patted dry and air-dried uncovered for a few hours before it goes on for the same reason.
Should you spatchcock a turkey?
If skin matters to you and presentation does not, yes. Removing the backbone and flattening the bird puts breast and thigh in the same plane, which is the direct fix for the central problem with poultry: dark meat wants more heat than white meat, and a whole bird makes you choose. A spatchcocked turkey also cooks roughly a third faster and exposes far more skin to the heat.
Cooking whole is still fine at 275°F and up. If you go that route, shield the breast with a loose foil tent once it reaches about 150°F so the thigh can catch up, and take the bird out of any roasting pan so air moves around it. The whole turkey cut page covers buying, sizing and portioning.
When is a smoked turkey done?
When the breast and the deepest part of the thigh both read 165°F. Probe the thickest part of the breast parallel to the bone, and the thigh from the side into the joint area without touching bone, because bone reads hot and will have you pulling early. Carryover on a bird this size runs 10°F to 15°F, so many cooks pull at 160°F and let it climb, but the bird must clear 165°F before it is served.
Rest 20 to 30 minutes, tented loosely rather than sealed, because a tight foil wrap steams the skin you just spent hours crisping. Carve the breasts off whole and slice them across the grain, and take the legs and thighs off at the joint.
A note on colour: smoked poultry frequently keeps a pink tint near the bone and just under the skin even at 165°F. That is a reaction between smoke gases and myoglobin, not undercooking. Colour is not a doneness test on any bird, in either direction.
What about a turkey breast instead?
A bone-in breast is the easier cook and the higher-yielding one: about 0.4 hours per pound at 275°F, the same 165°F finish, and roughly 68 percent of its raw weight reaching the table against 52 percent for a whole bird. If you are feeding six people who all prefer white meat, a breast is the sensible choice and it removes the breast-versus-thigh timing problem entirely.
