A brine is a salt solution that seasons meat all the way through and helps it hold moisture during a long cook. The two decisions that matter are how strong and how long, and they trade against each other: a strong brine for a short time and a mild brine for a long time do similar work, while a strong brine for a long time cures the meat instead of seasoning it.

A definition first, because it is the source of most brine confusion. A 5 percent brine means 5 grams of salt per 100 grams of water, which is about 189 g per gallon or 47 g per quart. Percentages are the only honest way to write a brine down, because a cup of salt is three different amounts of salt depending on which box you own. A cup of table salt, fine weighs 2.07 times what a cup of diamond crystal kosher weighs, and swapping one for the other by volume is how a brine turns a turkey into a ham.

How do you read this chart?

Start with the item, not the strength. Every row above already carries the strength that suits it, because strength and time are not independent choices. Then work through in this order.

  • Match the item and the weight band. The two whole turkey rows exist because a 22 lb bird and a 12 lb bird are genuinely different soaks, and using the shorter time on the bigger bird leaves the interior unseasoned.
  • Measure the water, not the container. The strength is a ratio of salt to water. A gallon of water plus a bird is not a gallon of brine, and topping up with more water later dilutes what you mixed.
  • Weigh the salt if you possibly can. Grams are unambiguous. If you must measure by volume, use the row for your exact brand in the conversion table below and nothing else.
  • Use the midpoint for a first attempt. The range exists because thickness and personal taste vary. Aim for the middle, note what happened, and adjust next time.
  • Set a timer. Over-brining is one of the few barbecue mistakes with no recovery, and the failure is silent until you eat it.
  • Keep it cold for the whole soak. Below 40°F, without exception. A brine is not a preservative at these strengths.

What does each brine strength actually mean in salt?

Three strengths cover essentially everything. Light, 3% is for delicate proteins and short soaks: short soaks and delicate proteins. fish, shrimp and anything under an hour. Standard, 5% is the default for poultry and pork and the one you will use most. Strong, 8% is for short soaks only, and at that strength the meat starts curing rather than seasoning if you leave it.

Read across the Standard, 5% row and the problem with volume measurement is impossible to miss. The same brine is 1.34 cups of diamond crystal kosher, 0.87 cups of morton kosher, or 0.65 cups of table salt, fine. A recipe that says "one cup of kosher salt" without naming a brand is a recipe that works for exactly one of those boxes.

One further caution on table salt: most of it contains iodine and anti-caking agents, which can give a large brine a faintly metallic edge and can cloud it. Kosher salt is the default for brining for that reason as much as for its texture. Never substitute a curing salt containing sodium nitrite for kosher salt in these ratios. Curing salts are used at a fraction of a percent according to the exact rate on the packet, they are not interchangeable with anything, and improvising with them is genuinely dangerous.

Should you wet brine or dry brine?

A dry brine is salt applied directly to the surface of the meat at a set percentage of the meat weight. The salt draws moisture out, dissolves in it, and that concentrated solution is then reabsorbed, so the seasoning ends up inside the meat without any added water. For smoking, this is usually the better technique: it needs no container, no refrigerator space and no bucket, and it leaves the surface drier, which means better bark and better skin.

A wet brine adds water weight as well as salt. That is a real advantage on very lean proteins with no fat to protect them, which is exactly why chicken breast, boneless and turkey breast are the highest-value wet brines on this page. It is close to pointless on a fatty pork butt, where the cut already has everything it needs.

A worked example, computed from the rates above. A 14 lb beef brisket, whole packer at the heavy rate of 1.5 percent takes 95.3 g of salt, which is about 7 tablespoons of Morton kosher. Apply it the night before, leave the brisket uncovered on a rack in the refrigerator, and it will look wet after an hour and dry again by morning. That is the salt going in, and it is exactly what you want to see.

Dry brining also stacks cleanly with a rub, provided you do not double the salt. The rub ratio chart works out how much salt each rub style is already delivering, which is the number to subtract before you dry brine on top of it.

What happens if you brine for too long?

The meat cures. Salt keeps migrating inward as long as there is a concentration gradient, and past a certain point the proteins are denatured enough that the texture changes permanently: spongy, bouncy, and unmistakably hammy in flavour. There is no rinse, rest or cook that reverses it. This is the failure mode behind almost every "my brined turkey was too salty" story.

Small pieces get there fastest because they have the most surface area per unit of mass. That is why shrimp, peeled brine for 15 to 30 minutes while a 10 to 16 lb turkey brines for 12 to 18 hours. Treat 24 hours as an absolute ceiling regardless of size or strength.

Two special cases are worth flagging. Pre-brined supermarket birds, sold as enhanced, self-basting or containing a solution, are already at roughly the salt level a brine would deliver, and brining them again produces exactly the failure above. Check the label. And corned beef or any commercially cured product is already far past brine territory: a store-bought corned beef destined for pastrami needs a soak in plain cold water for 8 to 12 hours to pull salt back out.

Do you rinse, and what about air drying?

After a wet brine, rinse briefly under cold water and pat completely dry. The surface layer is saltier than the interior and it is also soaked, and both of those hurt: the salt tastes harsh and the water steams instead of browning. After a dry brine, do not rinse. The salt has already been absorbed and there is nothing on the surface to remove.

In both cases, an uncovered rest in the refrigerator afterwards is the highest-value free step in this whole subject. A few hours, or overnight for poultry, dries the surface into a tacky pellicle that browns properly and takes smoke better. It is the difference between rubbery skin and skin you can bite through, and it costs nothing but shelf space.

One legitimate variation on all this is injection, which places seasoned liquid directly into the interior of a large cut with a meat injector. It reaches the middle of a nine pound butt far faster than any soak. It also carries a real caveat: injecting pushes surface bacteria into the interior, so an injected whole-muscle cut must be cooked like ground meat rather than like a whole cut, and it should never be pulled to a rare or medium rare doneness band.

What are the common mistakes with a brine chart?

  • Measuring salt in cups without checking the brand. The single biggest error on this page, and it is a 2.07x error at the extremes.
  • Brining an enhanced or self-basting bird. It is already brined. Read the label before you buy.
  • Using the container volume instead of the water volume. Strength is a ratio to the water, not to whatever the bucket holds.
  • Letting the brine drift above 40°F. Check it with a thermometer rather than assuming a cooler is cold. A wireless probe such as the ThermoMaven two-probe base can sit in the brine and alarm if it climbs.
  • Adding sugar or aromatics and calling it stronger. Sugar browns and balances but it does not brine. Only the salt percentage does the work.
  • Boiling a brine and using it warm. If you heat a brine to dissolve salt or steep aromatics, it must be chilled to refrigerator temperature before the meat goes anywhere near it.
  • Reusing brine, or basting with it. It held raw meat. It goes down the drain.
  • Brining in a reactive container. Bare aluminium and unlined cast iron corrode in salt solution. Use food-grade plastic, stainless steel, glass or a brining bag.
  • Skipping the dry-off. A wet surface will not brown and will not take smoke, no matter how good the brine was.
  • Assuming a brine changes the finish line. A brined chicken is done at 165°F exactly like an unbrined one. Confirm it with an instant read such as the MEATER Plus or any calibrated probe.

Brining also does not extend the 4 hour danger zone budget, and time spent in a brine above 40F counts against it.
