Pellet consumption is the number that decides whether you run out of fuel at 3am. A pellet grill burns roughly 0.85 lb per hour at 225°F, 1.1 lb per hour at 250°F and 1.4 lb per hour at 275°F, which means a standard 20 lb bag covers about 23.5 hours, 18.2 hours or 14.3 hours respectively. A 14 lb brisket at 250°F takes about 17 h 30 m and eats roughly 19.3 lb of pellets.

A definition worth stating plainly: burn rate is a function of grate temperature, not of how much food is on the grate. The controller is fighting heat loss through the walls and out the chimney, and a loaded chamber costs you very little extra fuel. What does cost you is cold air, wind and opening the lid.

Why does a pellet grill burn so much more at high temperature?

Because heat loss scales with the difference between the chamber and the air outside it. Holding 450°F on a warm, above 70f, sheltered day means maintaining a gap of several hundred degrees across a thin steel wall, and the only way a pellet grill can do that is by feeding the burn pot faster. The rate at 450°F is 5 times the rate on the smoke setting, which is a much steeper curve than the temperature difference alone suggests.

That curve is also why the smoke setting is the cheapest heavy smoke available on any cooker. At 180°F the auger cycles slowly, the pot smoulders, and you get maximum smoke output for $0.68 an hour. The catch is that 180°F is below any useful cooking temperature, so it is a phase at the start of a cook rather than a way to cook. Never hold food at that temperature for hours in the hope of extra flavour, because it parks the meat close to the top of the danger zone.

How much extra do cold and wind cost you?

A single-wall pellet grill in freezing wind can burn 70 percent more than the same grill in mild sheltered conditions, and in the worst cases it will not hold 225°F at all. This is the specification argument for a double-walled or insulated cooker, and it only matters if you actually cook through winter.

Wind is the variable people underestimate. Moving air strips heat off the outside of the cooker far faster than still cold air does, which is why a sheltered 20°F morning can be easier than an exposed 40°F one. A physical windbreak on the upwind side is worth more than any accessory, and it costs nothing. Welding blankets and insulated jackets work as well, provided they are rated for the job, kept clear of the hopper and the chimney, and never left on a grill running above about 300°F.

Two cheaper habits help as much as either. Keep the lid shut, because every opening dumps the chamber and the controller answers by feeding the pot. And run the grill with a full hopper in the cold, since a nearly empty hopper of chilled pellets makes the auger work against a bridged mass rather than a flowing one.

How many pellets does a specific cook take?

These are computed by multiplying the cook time for each cut by the burn rate at that grate temperature, so the fuel figure and the time figure come from the same source. The cold column applies the 1.7x freezing multiplier, which is the number to plan against if you cook in winter.

Read the brisket rows together, because they make the trade explicit. Running a 14 lb packer at 225°F instead of 250°F adds hours to the cook and adds pellets to the bill, and it does it for a difference in the finished brisket that most people cannot identify blind. That is the fuel-side argument in 225 vs 250 vs 275, and it is a real one on a cooker that meters its own fuel.

Will your hopper hold the whole cook?

Hopper capacity is the specification that decides whether an overnight cook needs an alarm. Most backyard pellet grills carry 18 to 20 lb, portable models carry as little as 7 lb, and large competition cookers carry 40 lb. Match that against the burn rate and you know whether you can sleep.

Treat those numbers as an upper bound and knock 20 percent off. Augers do not reliably feed the last few pounds, the shape of the hopper leaves pellets stranded in the corners, and a hopper that runs dry mid-cook does not just pause: the fire goes out, the controller throws an error, and restarting means clearing the burn pot before you can relight. How should you store pellets so you are not buying them twice?

Pellets are compressed sawdust bound by the wood own lignin, with no glue holding them together. Moisture is the enemy: a pellet that absorbs humidity swells, loses its structure and turns back into sawdust, which jams augers and produces a weak, smoky, uneven burn. A bag left open in a damp shed for a season is often unusable.

  • Sealed containers, not open bags. A lidded plastic bin with the bag inside it costs very little and effectively ends the problem.
  • Empty the hopper if the grill will sit unused for more than a week or two, especially in a humid climate. Vacuum out the fines while it is empty.
  • Buy the size you will use. A 40 lb bag is cheaper per pound and worthless if half of it degrades before you burn it.
  • Keep flavours separate and labelled. Mixed leftovers in a bin become an unrepeatable blend, which is fine until you cook something good and cannot do it again.
  • Check before a long cook. Squeeze a handful. Good pellets are hard and snap; degraded ones crumble and leave dust on your palm.

One more habit worth building: never mix a new brand into a half-full hopper before a long cook. Different pellets have different densities and ash characteristics, and a brisket overnight is the wrong time to discover that a blend bridges in your auger. Run a short cook on a new bag first. Plan on about 15 percent more between 50F and 70F, 35 percent more between 32F and 50F, and up to 70 percent more below freezing or in wind. Wind matters more than air temperature alone.

How much does it cost to run a pellet grill?

At roughly a dollar a pound for a house blend, holding 225F costs about a dollar an hour in fuel, and a full brisket cook runs somewhere between fifteen and twenty dollars of pellets. That is meaningful next to the cost of the meat but small next to buying the same brisket cooked. Premium single-species pellets can double the fuel cost without changing the cook time at all.

Not for long.
